Using your new email account:

This can be done one of three ways, the first is the easiest.
Through the webmail access:  Go to http://admin.1and1.com, click on the WebMail Login link, next to the  icon of the envelope.
Second is to click on the 1&1 Easy Login link underneath the WebMail Login, this is a download that will place an icon in the tray next to the clock on your desktop, and from here you may enter all of your email accounts and they will open with out the need to re-enter your email and password everytime.
The third is to use Outlook or another webmail browser.  You may also use your phone if it has that capability.  The information needed for these items will be provided upon request.

I just tested the email in Outlook and it works great, also you may use it with any email program that uses POP3 or IMAP(preferred for allowing synchronization), such as Thunderbird (Mozilla's program), Netscape Mail, etc.

Just a suggestion, but instead of having people login to get their e-mail do what I do with my domains. Setup a forwarding system.  So for example, if an e-mail is sent to daijoubukun@xboxjunkies.org it would be forwarded to my yahoo.com e-mail.  That should allow for e-mails to be available for admins.  I don't know what 1and1 gives you, lucky for me I run my own mail server so I have unlimited accounts.

Yeah they allow forwarding of emails to another account. That is how I have mine setup although I don't even remember for sure what it is (prob bassmadrigal (at) xboxjunkies.org) Still nobody uses it. Everyone remembers my yahoo one.

Yeah, it is setup like that right now, but at the rate we are going we do have unlimited.  We are using 16 of 1200 accounts each with 2gb of space.  By the way, if you want that, I can get you that email address Dustin.
